Most kitchens run three boards and quietly resent all of them.
There's the beautiful one, usually a gift, which lives in the cupboard because you're scared to mark it. There's the plastic one you actually use, scored to hell and slightly grey. And there's the wooden one that still smells faintly of the garlic you chopped a fortnight ago.
None of them is doing the job properly. Here's what's happening with each material and where it leaves you.
The plastic problem
Every cut you make into a plastic board takes a small amount of plastic out of it. That has to go somewhere, and the somewhere is your food.
Research published in 2023 put numbers on this for the first time, estimating that a person chopping on a polyethylene board could generate tens of millions of microplastic particles a year.
The figures vary enormously with technique, board material and how hard you cut, so treat any single number carefully. The direction is not in dispute. Scored plastic sheds.
Wood deserves more credit than it usually gets
There's a common claim that wooden boards are a bacterial hazard because they're porous. The research doesn't really support it.
Work out of UC Davis in the 1990s found that bacteria introduced to wooden boards were drawn below the surface and died off, while the same bacteria survived in the grooves of plastic boards. Wood turns out to perform well on food safety, which surprised the researchers as much as anyone.
The genuine problems with wood are practical. It absorbs moisture, so it warps and splits if you leave it wet or run it through the dishwasher. It absorbs smells, which is why last week's garlic is still there. It needs oiling.
And the good ones are expensive enough that plenty of people end up protecting them instead of using them, which brings us back to the beautiful board sitting unused in the cupboard.
A board you're too precious about isn't a board. It's an ornament with a job description.
Where silicone sits

Silicone isn't a plastic. It's a polymer built on a silicon and oxygen backbone rather than a carbon one, which is why it behaves so differently. It doesn't shed microplastics into your food, because there aren't any in it to shed.
It's also non-porous, so it doesn't take on moisture, smells or bacteria the way an open-grained timber does. Garlic on Tuesday doesn't turn up in Friday's fruit.
It goes in the dishwasher without warping, and temporary staining from beetroot or turmeric lifts with bicarb and a rinse (there's a full guide to that here).
The knife question is the one people ask most. Silicone is soft enough that it doesn't blunt your blades the way glass, stone or bamboo will, and it's firm enough not to slide around while you're working.
It takes cuts. It's supposed to. Knife marks on Chop are evidence it's being used, not evidence it's failing.
Where silicone doesn't win: it won't give you the sound and feel of a heavy end-grain block, and if that's the part of cooking you love, no amount of engineering replaces it. Fair enough.
The comparison, without the marketing
Plastic is cheap, cuts easily, and puts particles in your food. It also scores fast and gets harder to clean over time.
Wood is better on bacteria than its reputation suggests, feels excellent to use, and demands maintenance. It warps if you're careless and holds smells regardless of how careful you are.
Silicone doesn't shed, doesn't absorb, handles the dishwasher, folds or rolls into a drawer, and goes from prep straight onto the table without looking like equipment.
That last part matters more than it sounds. A board that's presentable enough to serve on removes a whole step and a whole washing-up item from every meal.

Questions
Will silicone blunt my knives?
No. It's softer than your blade, which is the correct arrangement. Glass, marble and bamboo are the ones that dull knives.
Can I put raw meat on it?
Yes, and then put it through the dishwasher. Non-porous surfaces are straightforward to sanitise. Use a separate board for raw meat if that's your system.
Do the knife marks harbour bacteria?
Silicone cuts close back on themselves rather than staying open the way rigid plastic grooves do, and a dishwasher cycle handles the surface. Replace any board, in any material, once it's deeply gouged.
Is silicone actually plastic-free?
Yes, in the sense that matters. Silicone is a silicon-oxygen polymer, chemically distinct from the carbon-based plastics that shed microplastics. Cheaper silicone is sometimes bulked out with plastic fillers, which is a different product wearing the same name.
How long will it last?
Years. It doesn't warp, split or need oiling. It stains temporarily and cleans back.
